I slept for a good portion of the morning. Then I got up and made me some soup and went back to bed for a while longer. Then I got up and toddled out and popped in a Mythbusters DVD. While I was sitting there, I wrapped some presents.

I also finally started playing Legend of Zelda: The Phantom Hourglass. I'm on my way to the temple on Ember Island. The game itself is good, and the story is good...but I'm really not sure what I think about using the stylus as the sole means of doing anything. I'm used to playing video games like this with my thumbs on buttons. It's giving me problems. Guess we'll see if I get used to it.

But yeah, first sick day from work. I could almost hear my middle schoolers singing, too...it sounded an awful lot like ♪Ding, dong, the witch is dead...♫ But I could be wrong xD

Continuing to work on fic-stuffs. I want to finish the [profile] fanfic100 story and possibly the [profile] 30_friends one by the end of this week. Or maybe another part of my Sekrit Project. I dunno. I'm trying to set goals for myself so I can hopefully get everything done.

Aaaaaaaand I have ideas for the next EIGHT fandoms on [community profile] 100fandomhell. So if I got them done by Christmas Eve...[personal profile] aishuu? How quick would my death be? *g*

And now, for [profile] mint_eclair, although anyone who is interested may partake...

My famous chicken quesadillas!

1 can cream of chicken soup
1 can chunk chicken (10 ounces)
1/2 cup shredded cheese (mild cheddar works best)
1 tsp chili powder
1 pack tortillas

- Preheat oven to 400 degrees Fahrenheit.
- Mix soup, chicken, cheese, and chili powder together in a bowl
- Put 1/4 cup of the chicken mixture on one half of each tortilla, leaving some space at the edge. Run some water around the edge of the tortilla, fold the tortillas in half over the mixture, and press the edges together firmly to seal.
- Put the quesadillas on a baking sheet
- Bake for ten minutes or until edges are golden brown.

Like most things, these are best fresh out of the oven, but they also reheat well AND taste pretty darn good cold. They go well with soup or fruit for side dishes--the soup recipe below is a good one :D

Really yummy homemade chicken noodle soup!

2 cans chicken broth (14 ounces each)
2 cups water
3 carrots, chopped
1/2 cup chopped cooked chicken breast meat
1/2 cup egg noodles
Lemon pepper

- Put the broth, water, and carrots in a saucepan. A pinch of lemon pepper goes well here. Heat.
- Cook the chicken with lemon pepper to give it a little extra flavor.
- Add the chicken to the broth mixture. Bring to a boil.
- Once it's boiling, add the noodles. Cook for approx. 12-15 minutes or until noodles and carrots are tender.

This recipe originally called for ginger, but I liked the lemon pepper a lot better. You can play with this recipe. I'm told that it also goes well with celery, but I don't like celery, so I don't add that.

Enjoy, and happy cooking! I'm going to watch a movie and write some. Then shower and bed. Back to work tomorrow!
